One of my favorite things to have for breakfast is pancakes, and this is the best recipe I’ve ever tried. They’re sooo fluffy and moist.. I mean, the golden crispy bit around the edge of the pancake is my favorite!
YOU WILL NEED….
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder (I know it’s a lot, but it makes them really fluffy)
- 1/2 teaspoon salt
- 1 tablespoon white caster sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
HOW AND WHAT TO DO…
In a large bowl mix together flour, baking powder, salt and sugar. Then make a well in the center and pour in the milk, egg and melted butter. Mix until smooth.
Heat a frying pan to medium heat and add a little “blob” of butter to the center of the pan and swirl it around, so that the whole bottom of the pan is coated. Pour or scoop the pancake-batter into the pan in small circles. When the pancakes start to form small air bubbles at the surface, and they are golden brown, flip.
One thing I love about pancakes (except for the delicious taste, obviously) is all the different toppings you can add. You could get really creative or you could stick with good old jam.
You could go with a healthier option like some sliced fruit and yoghurt or you could go for the sweet option.
One of my favorite “types” of pancakes are blueberry-pancakes. When I make them, I add the blueberries whilst the pancakes are cooking. As soon as you see air bubbles form at the surface, add a small handful of blueberries.
Top with a spoon of blueberry jam!
If you have a sweet tooth, this is the pancake for you! Follow the same steps as in the Blueberry Delight but instead of adding a handful of blueberries, add a hand full of chocolate chips or chopped chocolate. Top with a drizzle of melted chocolate!
Or you have the simple option of just adding some fruit. Like a sliced banana or lemon and sugar. Whatever you prefer.
